some birthday ice cream.


Cam and all his best buds had a blast at his sun and swim party.  The energy that was circulating around this house was enough to power the planet for a week, but we are so lucky that we love all his friends--they are the sweetest, happiest, most inventive group of boys.  And I lovelovelove their happy energy, even if I usually need a nap after they leave!  



The ice cream treats we served (instead of the traditional birthday cake) were a huge hit!  Cam and I went to the store together and he choose the toppings: colorful sprinkles, oreos and butterfingers.  

After we let the ice cream soften for a little bit, I scooped and formed it into big balls and rolled them in the toppings.  After each one, we immediately put it on a platter in the freezer.  You have to work really quick or they can get pretty messy! 


For the ice cream sandwiches we made Cam's two favorite cookies: double chocolate chunk and chocolate chip.  We made them the night before so they could cool completely, and then I scooped thin pieces of ice cream in between, repeating until it looked nice and full.  

I found it much easier to work with thin slices/scoops, rather than doing a big regular-sized scoop and trying to form it (squish it) in between the cookies.  

And I just thought of this at this very moment, but you could also roll the edges of the ice cream sandwiches in the sprinkles or other toppings too.  We probably would have done a few that way, if I had thought of it two weeks ago!



When it was time to sing Happy Birthday to our cutie pie Cam, we just stuck a number nine candle into one of the sprinkle ice cream balls and sang away.  We had a great day celebrating our boy, and I know this sounds like a mother's broken record--but I just can't believe how fast the years have flown by.  

And when we went and saw Toy Story 3 that night with all the kids, I couldn't stop crying about little Andy (they toy story boy) being all grown up and packing away all his toys and going off to college.  And I'll tell you, it was kind of embarrassing to walk out of Toy Story with a tear-stained face!  But sitting there in the theater on Cam's 9th birthday, all I could think was, he's half way there.  We've had nine wonderful years, and we only have nine more until he'll be graduating from high school.  Oh boy, what will I do?
