Getting Lucky

"Mommy, I am the LUCKIEST!"

This is what Andrew said to me as I was taking this picture. Some days he can just really melt my heart. And anyway, who wouldn't feel overwhelmed with luckiness when they realized the spatula, bowl AND mixing thing were all theirs?!

So, if you are feeling lucky (and have a couple old-ish bananas laying around) this recipe makes some great batter. And if there's any of that left, it will make you some delicious banana bread too.

BANANA BREAD

MAKES 1 LOAF OR 4 SMALL LOAVES

1/4 pound (1 stick) butter, at room temperature
1 cup sugar
2 eggs
1 1/2 cups flour

1 teaspoon baking soda

1 teaspoon salt

1 cup mashed very ripe bananas (2-3 bananas)

1/2 cup sour cream
1 teaspoon vanilla
1/2 cup chopped walnuts or pecans (we forgo these around here)


Preheat oven to 350. Butter 9 X 5 X 3 loaf pan or several smaller ones.


With mixer, cream butter & sugar until light and fluffy. Add eggs, beating well.

Sift (or don't) dry ingredients together and combine with butter mixture. Blend well. Add bananas, sour cream, and vanilla. Stir well. Stir in nuts and pour into pan.

Bake 1 hour, until cake tester comes out clean. Turn onto rack to cool.

Lick the bowl.

  2. I had a moment with Adallyn last week in exactly the same position, however I was helping her lick the bowl so I didn't grab the camera! I love banana bread!
